Ingredients for "Bean paste with dried tomatoes"
Olive oil (you can also use oil from dried tomatoes) - 60 ml
Lemon - 1/2 piece
Dried tomatoes (in olive oil) - 8 pcs
Capers — 2 tbsp.
Greens (fresh: parsley, lovage, sage) - 1 bunch.
Sweet paprika - 1/2 tsp. Beans (white, boiled or canned without additives) - 500 g
Onion - 2 pieces
Garlic — 1 slice.
Cooking time: 20 minutes
Cooking steps
Peel and finely chop the onion, peel the garlic clove and flatten it slightly; fry in a tablespoon of oil until the onion is golden brown.
If using canned beans, drain the liquid and rinse.
Put it into a processor, add the toasted garlic, the rest of the oil and the juice of a half a lemon. Make mashed potatoes. Sun-dried tomatoes and capers chop with a knife on a board or in a processor.
Fresh herbs – a little lovage, even less sage and parsley (according to your taste), chop.
Combine onions, dried tomatoes, capers, herbs and paprika with bean puree, mix well, add salt and pepper if necessary.
Serve with bread, but some prefer to eat this pate just with a spoon :-)
